Mini Apple Pies Recipe

After trying the San Antonio Mission by Alamo Coffee, I knew that I needed a sweet treat to go with it. Keeping in line with fall flavors and the hint of apple in the coffee, I wanted to make some amazing open faced Mini Apple Pies!

Drink this with your black coffee in the morning (or afternoon) with family and friends on Thanksgiving day! When they are only the size of a muffin, you can’t have too many. 

Homemade mini apple pies topped with whipped cream and served with coffee.

Recipe:

Yield: 12 Mini Apple Pies

Flaky Pie Crust:

  • 1 ¼ cup flour

  • ¼ tsp salt

  • ⅜ cup vegetable shortening

  • ¼ cup + ½ tbsp cold water

  1. Sift or whisk the flour and salt together in a mixing bowl. 

  2. Add shortening to the flour and mix until it looks coarse.

  3. Slowly add the water and mix it with your hands until it holds together. 

  4. Roll the dough into a ball, cover it in plastic wrap and put it in the fridge to rest for at least 30 minutes.

As your dough is resting, start prepping the apple filling.

  • 2 medium-large Granny Smith apples

  1. Peel and core your apples. Cut the apples into quarters and slice them approximately ¼ inch thick. 

  2. Put these in a bowl and place to the side.

After letting the dough rest, pull it out and unwrap it. Get out a muffin tin and have it next to your floured work station. 

Roll the dough until it is ¼ inch thick. Cut circles 3 ½ - 4 inches in diameter out of the dough. Gently press the dough into the muffin tins. Squish the dough just a bit to get it to stretch and creep up the edges.

Keep cutting the circles out of the dough. This recipe is capable of making 12 open faced mini pies.

After the dough is in the muffin tray, poke a hole in the bottom with a fork. 

Now add to the apples:

  • ¼ cup sugar

  • Squeeze of a lemon quarter (about ½-1 tsp)

  • ¼ tsp cinnamon (add more after tasting and season to your liking)

Do this at the last minute! If you do this too early, water will extract from the apples and cause your mixture to not set. 

Fill each dough cup about ⅔ of the way full with the apples.

Bake at 400 F for 20 minutes. Rotate them about halfway through for even coloring.

Bonus! If you want to add some homemade whipped cream (highly recommended), mix together 1 cup (8 oz) of heavy whipping cream, 2 tbsp sugar, and a dash of vanilla until medium-stiff peaks form on medium speed. Keep in the fridge or freezer.
