Spent Grain Oatmeal Cookies
What’s better than repurposing those used beer grains to make delicious oatmeal and chocolate chip cookies? This is an easy recipe that repurposes the grains one more time for another delicious treat. You’ll be dunking warm cookies in cold beer in about 30 minutes.
Yield: 16-18 cookies
Ingredients:
1 stick butter
¾ cup sugar → half brown sugar packed, half plain white sugar
1 egg
½ tsp vanilla extract
½ cup flour
½ cup spent grains (ground and sifted for a soft texture)
1 ¼ cup oats
½ tsp baking soda
¼ tsp salt
1 cup chocolate chips
Steps:
Preheat your oven to 350 F.
Cream together the butter and sugar. Add the egg and vanilla extract and beat mix until well combined.
In a separate bowl, whisk together flour, spent grains, oatmeal, baking soda, and salt.
Add the dry mix to the wet and mix well. This will look very dry for a cookie dough. Don’t be afraid to mix it with your hands to make sure it is evenly combined. Add the chocolate chips and mix until well distributed.
Line two baking sheets with parchment paper. Drop 1 inch diameter dough balls onto the parchment, leaving about 2 inches between each cookie.
Bake for 10-12 minutes.
Leave on the tray for a couple minutes to cool. Then transfer to a cooling rack.

These cookies are not too sweet, and if you use the spent grains they have a little crunch to them. They really did pair nicely with the stout, though each stands up on its own.
