Chiapas — Medium-Bodied Mexican Coffee

Fall and winter often inspire certain coffee flavors and roasts to emerge. For the month of December, I wanted to explore some of these and find coffee that brought forward the feelings of home and the comfort of winter. Chiapas from the Cafe Ole Commemorative Collection, does just that!

Chiapas is labeled as a medium-bodied, Mexican coffee with “rich flavors, a light smokiness and smooth finish.” When I read “Mexican coffee” my mind immediately thought of a cinnamon flavor, akin to the flavors in a Mexican Hot Chocolate or a Horchata latte, but that wasn’t present here. I found the Chiapas to be very smooth with subtle chocolate flavors, a hint of roasted oak, and a smoky finish.

This is a delicious cup of coffee that definitely made it into our favorites. The flavor profile’s simplicity is one of my favorite things about it -- reminding me of past winters curled up with a coffee, and future winters to come.
