Spent Grain Oatmeal Raisin Cookies

What better food pairing could there be for an Oatmeal Raisin Cookie Stout than an Oatmeal Raisin Cookie made from its spent grains. An easy recipe that repurposes the grains one more time for another delicious treat. You’ll be dunking warm cookies in cold beer in about 30 minutes.

Yield: 18 cookies

Ingredients:

  • 1 Stick of Butter

  • ¾ cup sugar - 1 half Brown Sugar and 1 half Sugar (Press the brown sugar to the bottom and fill with regular sugar)

  • 1 egg

  • ½ tsp. Vanilla

  • ½ cup flour

  • ½ cup spent grains (ground with food processor and sifted for smooth consistency)

  • 1 ¼ cup oats

  • ½ tsp. Baking Soda

  • ¼ tsp. Salt 

  • ½ tsp. Ground Cinnamon

  • ⅛ tsp. Ground Nutmeg

  • 1 cup raisins (or chocolate chips, if you prefer.)

Instructions:

  1. Preheat oven to 350℉. 

  2. Line cookie sheets with parchment paper.

  3. Cream the butter and sugar together, then add egg and vanilla. Mix well.

  4. In a separate bowl combine the flour, oats, baking soda, salt, cinnamon, nutmeg, and spent grains (If you don’t have any, just replace with regular flour.)

  5. Slowly add wet ingredients to the flour/oat mixture and mix.

  6. Fold in the raisins (or chocolate chips).

  7. Scoop ping-pong sized cookie balls (~ 1 inch diameter) onto parchment paper.

  8. Bake for 12 minutes. Let them cool on a cookie sheet and move to a cooling rack.

  9. Enjoy with beer. Or Milk, I guess.

These cookies are not too sweet, and if you use the spent grains they have a little crunch to them. They really did pair nicely with the stout, though each stands up on its own.
